Hello! First I guess I should say why we are going to try the Paleo Diet. There are a couple of reasons. I have been suffering from IBS for a couple of years. I have been told to try the Elimination Diet for four years now, but it is hard to find a specialist that will help you with it so I have put it off. I have an aunt that that has been dong the Paleo Diet and is doing so much better in her health issues. This October I have been diagnosed with Hypothyroidism, low Vitamin D, and low testosterone. I am sick of being sick!! This is me trying to get better. I tried doing it on my own a couple of months ago, but it is difficult when I'm making my own food and then stuff for the rest of the family. No good! I will let you know as well that it is difficult to do this, well at least for me it has been. I am a person that likes to research, get a game plan down, make the menu, and stick to it. I came across robinssweetconfessions.com. She has a 30 Day Challenge that I have asked my three teens and husband to do this challenge with me. They have all agreed, the teens reluctantly. hahaha The research is done, well some of it. The trouble that I am now running into is lunches, the kids do not have a microwave to us at school. I need to find things that the kids will eat at school that they do not have to warm up and especially that they will like so that they stay with this. This is when I decided to write a blog to journal this journey of ours. Tonight I will put together the menu. Wish me luck!
